舌的上面有一向前开放的“V”型沟叫界沟，将舌分为前2/3的舌体和后1/3的舌根。舌体的前端叫舌尖。舌的下面正中有一粘膜皱襞，称为舌系带。在舌系带根部的两侧有一对小的隆起，称为舌下阜，阜顶上有下颌下腺管和舌下腺管的共同开口。由舌下阜向后外侧延伸的粘膜隆起，称为舌下襞，此襞深面藏有舌下腺。
舌面上的粘膜表面有许多小的突起，称舌乳头。按其形状可分为丝状乳头、菌状乳头、轮廓乳头等。丝状乳头数量最多，呈白色丝绒状，具有一般感觉的功能。菌状乳头数量较少，为红色钝圆形的小突起，散在于丝状乳头之间，内含有味蕾，司味觉。轮廓乳头最大，有7～11个，排列在界沟的前方，乳头中央隆起，周围有环状沟，沟壁内含有味蕾司味觉。
